Weekly Menus

Here's where I've collected the menus I've posted along with the printable .pdf version containing the menus, recipes and shopping lists. Most of the feedback I've gotten is that four days is about all you guys can take, so these ought to get you through a week. Check these out if you don't want to think about what to cook. Just let me hand it to you virtually and say "Here. Cook this."

Menu 1
Day One:
Green Salad
Pork Cubano
Black Beans
Rice (I use brown. You do what you like and just follow label instructions.)
Note: The leftovers make excellent pork sandwiches. See Day Five.

Day Two:
Green Salad
Arroz con Pollo

Day Three:
Green Salad
Orechiette with Chicken, Tomato and Basil Sauce

Day Four:
Fruit Salad
Latin-Style Flank Steak
Pinto Beans and Rice


Day Five:
Leftover pork Cubano
Buy crusty rolls, reheat the pork and serve with purchased cole slaw


Menu 2
Day one:

Salad
Pork Tenderloin with Lime Sauce
Jasmine rice


Day two:
Fresh Pineapple
Chicken Poached in Coconut Curry (this is a little spicy)
Steamed Rice


Day three:
Salad
Southwestern Turkey Meatloaf
Mashed Potatoes with Roasted Chilis
Green Beans

Day four:
Roasted Chicken Thighs, Yukon Gold Potatoes and Lemons with Cilantro Gremolata
(this sounds a lot fancier than it is - it's basically roasted chicken thighs and potatoes)
Asparagus with sauteed shallots


Day five:
Salad
Black, white and red bean chili with sausage

Day six:
Make quesadillas with the leftover chili and cheese

Menu 3
Day One:

I've included a salad you have to make in this one. You can, of course, ignore me and concoct your own, but this is a good one, and the soup is so ridiculously easy that you'll have time to put this salad together too.


Almond Salad with Orange Vinaigrette
White Bean Soup with Kale (Yes, kale. I know, some of the kids won't like it, but try it. It's really good! Tell the boys it's chopped up frog and they'll go to town on it.)


Day Two:
Pork Chops with Caramelized Onion and Smoked Gouda
Bay-Steamed Broccoli
(You could also serve with mashed potatoes, if you like. Remember to add potatoes to the grocery list if you do.)


Day Three:
Green Salad
Mac and Cheese


Day Four:
Spicy Korean-Style Pork Medallions with Asian Slaw


Day Five:
Chicken Stew with Spinach, Potatoes and Porcini

Menu 4
Day One:

Crisp Pancetta Baked Pork Tenderloin
Black Kale with Garlic and Onion

Day Two:
Green Salad with Cranberries, Pecans, Goat Cheese and Apple Cider Vinaigrette
Maple Syrup and Mustard Glazed Hens
Parmesan Potatoes

Day Three:
Salad
Beer-Braised Sirloin Tips with Mushroom Sauce
Steamed Rice


Day Four:
Chicken Coconut Soup

Day One:

Green Salad of your choice
Spicy Chicken and White Bean Chili

Day Two:
Pork Chops with a Dijon-Rye Crust

Stewed Cabbage and Apples


Day Three:
Green Salad of your choice
Creamy Shrimp Grits with Prosciutto


Day Four:
Stir-Fried Beef and Broccoli with Black Bean Sauce
Steamed Rice

Baby Romaine Salad with Spicy Chicken and Warm Chipotle Vinaigrette

Day 2:
