My oven is lame, and yes, I know it's filthy.
This is what my kitchen looked like when I walked into it at 5:57 PM.
(Not just the oven that's filthy.)
Even people with no children have laundry!
Dinky was no help.
Pootie was working out with Tony.
I did my workout earlier, thanks very much.
That left me with a dirty kitchen, laundry, a worthless no-help dog, an already-occupied husband, and dinner to create out of mostly thin air. We didn't have much in the way of groceries either.
This called for moral support.
I always keep canned beans around. And onions. And if Costco has some good looking sausages, I'll usually grab a big pack of those and freeze them. They come in handy. I'd snagged some roasted red pepper, spinach and chicken sausages last time we were there.
An onion and a couple of cans of black beans, and I was in business. Easy enough to put together a black bean soup with sausage.
I also had some tortillas and a few tablespoons of goat cheese. Quesadillas coming right up!
And there were enough green leafy things to allow me to call something a salad.
Not the greatest meal on earth, but certainly passable for having not much of anything edible in the house.
