Peach Caprese

This is one of my favorite summer salads. It's perfect when the peaches are in peak season, which is more or less now. Layer fresh peach slices with good quality mozarella, sprinkle with chopped fresh basil, sea salt and pepper, and drizzle with white balsamic (or regular) and a little good olive oil. "Wa-La". A delicious and pretty first course.
