Last night we needed some veggies, and our Farmer's Market stash has finally run out. So it was salad time! I roasted some baby white potatoes until they were crisp. Then I sauteed some shrimp with minced garlic, a minced pimento pepper, some paprika and oregano. I made a dressing of lemon juice, a touch of honey, salt and pepper, and good olive oil. I dressed some greens with that, then topped them with the potatoes, shrimp, some olives, and some crumbled feta cheese. It was pretty good! P. loved it.
